Part of a team of hardworking Cooks and Chefs – Assistant Cooks are learning the ropes in the vast Culinary operation on board. They support various functions aboard, and starting as an Assistant Cook can lead to career opportunities in all specialties of our Culinary Operations. A day in the life as an Assistant Cook could involve the following:

  • Food preparation across a range of culinary areas
  • Following recipes and supporting culinary leadership
  • Ensuring specifications are followed to ensure quality and consistency,
  • Ensuring high levels of sanitation and cleanliness are maintained, all in keeping with company and USPH standards.  
  • Supporting logistics, preparation, and other tasks to support the culinary teams.

  • Arrive at work on time in a clean and company-specified uniform.
  • Learn to maintain the quality and presentation of all food served and the expedition thereof.
  • Learn and follow all USPH and HACCP procedures in food production and galley maintenance.
  • Assist the cooks in production and servicing the lines.
  • Learn to follow all recipes to company specifications.
  • Communicate and cooperate with all other team members to ensure a smooth food delivery system.
  • Ensure garbage separation standards are being followed.
  • Perform all other tasks assigned by senior management.

Position Requirements:

  • Minimum one year's experience in a restaurant, hotel, or cruise ship environment.
  • Must have worked in a high-volume professional Culinary environment.
  • Strong comprehension of the English Language.
  • Must be physically strong and able to lift a minimum of 60 lbs to sustain physically challenging work.
  • Ability to work as part of a team and independently.

Undergo assigned trainings to develop skills & knowledge for the future positions.

Report any equipment malfunction, difficulties & concerns to the supervisor on duty.

Follow additional duties, other than listed in the job description, assigned by management due to the operational needs/shortages/changes.

Ensure beverage stations are full at all times and cleaned daily.

Engage in light conversations with guests always greet them with a smile.

You should have at least 1-2 years of experience in a similar role.

Fluency in spoken English to connect with guests is required.

Minimum guest interaction might be required.

You must pass a Seafarers Medical Fitness Examination.

You focus on continuous improvement and collaboration.

The Assistant Cook has the responsibility to prepare the ground work for the daily menu items under the supervision of his section leader or manager and following recipes and guidelines provided. He must possess a good basic professional knowledge of all sections in a classic kitchen.

Essential duties and responsibilities

Operational

  • • Prepare all basic food items for the menu requested by his supervisor.
  • • Must possess good knife handling skills.
  • • Must be able to work in any section of a kitchen.
  • • Must have a good food knowledge and understanding of culinary terms.
  • • Must be able to read, understand, follow and prepare company recipes.
  • • Must be proficient in effecting completing tasks, work efficiently and productively.
  • • Must be familiar with the Public Health rules and regulations and ensure that they are followed on a daily basis.
  • • Maintains his assigned area in preparation for announced or unannounced inspection either done by the Food & Beverage Manager or the actual inspectors.
  • Reports for duty at assigned times, follows his/her supervisor’s instructions, and ensures that personal appearance, uniform and personal hygiene are in accordance with the company’s rules and regulations.

Training & Development

Attends meetings, training activities, courses and all other work-related activities as required.

Responsible for cost containment through the proper use, handling and maintenance of records, reports, supplies and equipment.

Safety Responsibilities

Must be familiar with the galley layout in terms of safety and security, must have a full understanding of ships rules / regulations (SMS) and participate in all required safety drills / training.
