Heritage Fire: Chefs take it back to primitive-style cooking

ASHEVILLE - Area chefs have accepted the challenge to prepare locally sourced ingredients using creative approaches in an unpredictable environment.

Cochon555’s Heritage Fire Tour is making a stop in WNC for the first time. The chefs will demonstrate diverse cooking techniques with a focus on cooking on an open flame. On July 17, Heritage Fire-Asheville will debut at Franny’s Farm, 22 Franny’s Farm Road in Leicester.

Terri Terrell, of Ladies Who Brunch pop-up series, is one of the chefs slated to participate in the ultimate open-air, live-fire collaborative tasting event.

“Working with live fire, you don’t have that much control. You don’t have a thermometer on the fire, necessarily,” Terrell said. “What’s rewarding is the success — is building the fire that you want that’s consistent with the dish you are cooking. Timing live-fire and getting it out the way you want … there’s the trick and there lies the reward."

Guests will be privy to live entertainment and unlimited food tastings, in addition to wine, cocktails and craft beer plus curated beverages and dish pairings.

The venue creates an organic flow and a picturesque view of a working farm and the Blue Ridge mountains.  

“It’s this huge open space surrounded by goats and sheep and cows and everything,” Terrell said. “And the setting, I don’t think you can ask for anything better.”

The cooking arena is designed to stimulate guests visually, too, said Brett Friedman, the CEO of Agency 21, the event production and management company behind Heritage Fire.

“It creates this enjoyable view for people as they’re entering and they see these 20-plus different chefs cooking on this open fire — each one with their own individual creation of open fire,” Friedman said. “You almost have to immediately shift gears from the viewpoint of what a traditional barbecue looks like.”

Who’s cooking what

Each chef is designated a protein or vegetable to “make shine” using their choice of open-air cooking methods, such as a live-fire pit, open fire grill or smoker, Lauren Melamed, director of integrated marketing, said. Cast iron pans, grills or cinder block pits are among the options, too. 

Owen McGlynn is chef and owner of Asheville Proper, a restaurant based on live-fire cooking. However, the chef signed up to cook without the amenities of a traditional restaurant kitchen.

“It’s pretty primitive. Basically, some grates and some cinder blocks and they’ll have wood there for us and we’ll do our cooking,” McGlynn said. “It’s to have fun with it. I’m going to enjoy it. I think it’s going to be a good time.”

Live fire cooking creates a tasting experience unlike food cooked on a stove, he said.

“You get a nice char from it over the coals — smokiness,” McGlynn said. “It imparts different flavors to it, for sure.”

McGlynn is planning to prepare in-house dry-aged New York strips with locally sourced heirloom tomato chimichurri, a Vidalia onion salad and tallo ash aioli. Locally sourced ingredients will include tomatoes from Perez Farms.

Terrell, a Mississippi native, will make “Oyster Natchez,” described as a grilled, fire-roasted oyster with tomato aspic, Hickory Nut Gap Farm bacon, Delta aioli, Urfa chili flakes, okra dust from the Utopian Seed Project and microgreens from Asheville Microgreens. Local tomatoes and Spicewalla spices will be incorporated.

“It’s a little take on a BLT in a way on top of an oyster,” Terrell said.

Executive chef Michelle Bailey cooks with live fire “all day, every day” at Smoky Park Supper Club.

“It’s not really a flavor you can replicate in any other way, and there’s so many different applications of cooking with live-fire from low and slow smoking something at 225 degrees for 15 hours to running our grill at 750 degrees for service so we can char pork chops and steaks and cook burgers to order," she said.

At Heritage Fire, Bailey will create a “classic bite” of light, seasonal dishes. On the menu is “broke down gumbo” made with house andouille served with fire-roasted shrimp and topped with pickled tomatoes and trinity salad with fresh herbs and thinly cut vegetables. Crispy okra will be sprinkled on top. It will be finished with a smoked dark roux smoked Duke’s with charred rice dust for garnish.

Bert Sheffield, a chef at White Labs Brewing Co., will switch gears from pizza to get back to his native roots in South Louisiana. He is planning to prepare a grilled Cajun-style boudin sandwich served with a slice of bread and topped with grilled vegetables, remoulade and an okra and celery salad.

“Something nice and fresh to break up all of that rich, juicy meats,” Sheffield said.

White Labs will provide beer on tap, including Hoppy Lager, made with German lager yeast.

“When it comes to these beer and food festivals, the pairings definitely matters but it’s more about the quality,” said Erik Fowler, head of education and craft hospitality. “You put good beer and good food in front of somebody and show them a good time – that’s really what’s most impactful.”

The Heritage Fire Tour is a celebration of heritage breed proteins and heirloom produce and promotes sustainable agriculture and consumer eating. There is an upward trend of more people being interested in what they consume, Friedman said.

In 2010, the food and wine festival series was launched in Napa Valley, California. It continues to showcase pasture diversity and family farming in various regions across the U.S.

This year, Heritage Fire Tour has nine cities on the roster, including Atlanta, Los Angeles, Miami and Nashville.

“We’re always looking for new, innovative cities, and Asheville just hit it on the head for where we’d like to be for this tour,” Friedman said.

“We bring 20 of the top chefs in each city that we tour to to shed light on all of the incredible food offerings supported by local farms to consumers in more of a fun, innovative way,” Melamed said. “Asheville has such an incredible food community and such incredible chefs it was a no-brainer when we decided which tour stops we were going to this year.”

Although the mission and overall format are the same from city to city, the experience is unique for each destination. Local chefs, winemakers, brewers and the focus on local and regional ingredients and agriculture give the festival a flair that can’t be duplicated.

“What’s so great about this event is you’re not going to see the same style of cooking each year. You’re going to see different chefs involved,” Melamed said. “We’re really excited to bring this to Asheville for many years to come and make it an annual event here.”

For the chefs, it's also a time to connect with the community and each other.

“It will be fun getting these different chefs together from Asheville and regional, too,” McGlynn said. “Just meeting new people… seeing what everyone brings to the table. I think it will be fun. Everyone’s doing something different. I’m excited to get together with everybody and enjoy ourselves and get outside.”

Red Square Tour

Our first stop is named "Beautiful". Or Red. Red meant "beautiful" in the old times, so prepare your camera for stunning views and plenty of excellent photo ops. 

  • - Walk through the Resurrection (or Iberian) Gate and don't forget to flip a coin to make sure you come back one day. Keep in mind, almost everyone wants ot come back, so... you know what to expect;
  • - Visit the lovaly  Kazan Cathedral and listen to its story of magic transformations during the Soviet time;
  • - Shop in the glamorous  GUM , once the Upper Trading Stalls, the girst mega store of Moscow which was built over 120 years ago and still operating!
  • - Admire the stunning  St. Basil's Cathedral from all sides and go around it as many times as your legs can carry you, no rush. Built to mark the capture of the cities of Kazan and Astrakhan. After construction of the cathedral, the poor architect was blinded by Ivan the Terrible. Guess why? (Hint: the cathedral is really beautiful);
  • - Beware of  Lobnoye Mesto (or "Place of the Skulls"). You may want to stay away form this place, otherwise the spirit of Ivan the Terrible may haunt you. Lobnoe Mesto used to be Ivan the Terrible's stage for religious ceremonies, speeches, and important events. Rumour has it people were beheaded on this spot. 

Kremlin Tour

With dual cultural and historical status, the Kremlin is simply gorgeous.

  • - The Cathedral of Twelve Apostles nowadays functions as the grand entrance to the luxurious Grand Kremlin Palace;
  • - The Tsar Bell , the largest bell in the world, and Tsar Cannon , the largest cannon by caliber in the world. You will fillyour camera in no time with these two;
  • - The Ivan the Great Bell Tower symbolically represents the exact centre of Moscow city and resembles a burning candle (just the right shape considering the location);
  • - The Cathedral of the Assumption , 5 pillars and 5 domes of awesome. It was the traditional place of coronation of the grand princes and tsars as well as the burial place of metropolitans and patriarchs. A perfect blend of Italian Renaiisance and Russian traditions;
  • - The Cathedral of the Annunciation , the private church of Russian grand princes and tsars for domestic and family ceremonies;
  • - The Cathedral of the Archangel , the necropolis of the Moscow dynasty of Ruriks and first Romanov tsars. The history of the necropolis started in 1340 with Ivan I, who was (of course, you already guessed) the great grandfather of Ivan the Terrible;
  • - The Armory originated as the royal arsenal in 1508 and boasting the richest collection of the works of Russian and foreign decorative and applied art of 4th-20th centuries;

+ The procession of the pedestrian and equestrian guards of the President's regiment (only April thru October).

Fun Facts about Red Square and Kremlin from our tours

  • Red Suare appeared thanks to the... fire. The ffire at the end of the 15th century destroyed all the buildings. After the fire it was decided not to build up the territory. Thus was formed Red Square.
  • Assumption Cathedral (located in the Kremlin) is the oldest survived building in Moscow (built in 1474-1479).
  • It is widely believed that the Lobnoe Mesto (Place of Skulls or Place of Execution) was intended for executions. Executions were indeed carried out here, but very rarely, because it was considered a sacred place. More often, it was a place for royal decrees.
  • After the casting, the Tsar Cannon was initially installed on Red Square near the Lobnoe Mesto and was intended for the defense of the Kremlin. However, it never took part in any wars.
  • Tsar Bell lay in the pit for about 100 years.
  • During the creation of the monument to Minin and Pozharsky, the models for the sculptor were his own sons.
  • Initially the monument to Minin and Pozharsky was located in the center of Red Square in front of the GUM. In 1931, it was moved closer to St. Basil's Cathedral.
  • Moscow Kremlin towers were decorated with two-headed eagles for several hundred years since the XVII century. In 1935 it was decided to replace them with five-pointed stars.
  • Kazan Cathedral (the one at the intersection of Red Square and the streets of St. Nicholas) was blown up during the Soviet era (1936). In 1990-1993 it completely recreated.
  • In 30-ies of XX century it was planned to demolish the GUM. In its place was planned to construct a building for the People's Commissariat of Heavy Industry.
  • In the period from 1953 to 1961 the Lenin mausoleum was also a place for the body of Joseph Stalin.
  • In May 1987, the pilot-athlete from Germany made an unauthorized flight from Helskinki to Moscow and landed on Red Square.
  • In 2005, near the walls of the Kremlin in Nizhny Novgorod town was installed a replica of the Moscow monument to Minin and Pozharsky, but 5cm less.
  • The architectural ensemble of the Moscow Kremlin is included in the UNESCO World Heritage List. A

The Chabad Lubavich Synagogue holds regular services which are mostly in Hebrew. You will find the establishment quite pleasing.

The tour is conducted by Spielberg journalist Svetlana, who interviews survivors of the Holocaust and works for Spielberg organization and Moscow synagogue. If you have time , we will be happy to show you the movies in English about Sobibor survivors. During the tour, you also will have a chance to talk to locals Jews who survived Soviet time in Moscow and experience new Jewish life in Moscow.

Next we will visit JCC ( Jewish community center) in Marina Roscha and museum of Tolerance and Jewish history.

Main room for prayers

JCC in Marina Roscha is a place that never rests, with multiple daily services, two kosher restaurants (one meat, one dairy), and a plethora of educational and social programs. The community is an eclectic mix of Russian Jews, both religious and secular, with a large number of Israelis and Anglos. JCC contains Orthodox synagogue, gym, dating club, concert hall, exhibitions of Jewish painters, etc. The neighborhood also has kosher grocery stores, publishing house, Jewish medical center called after Rambam, Charity center. You will have chance to see all the services provided by JCC and talk to local Jews who are happy to share their impression about their life in Russia after the USSR.

The main goal of the Jewish Museum & Tolerance Center is to establish a creative, interactive platform for dialogue between different cultures.

The Museum of the Jews’ History

For the most part in our Museum the history of the part of Jewry that had fallen under in the power of the Russian crown after three partitions of Poland is represented. In everyday life culture, religious traditions, language, customs this group was genetically connected to Ashkenazi Jews – the European Jewry. This is the name of the Jews, migrated to Poland from Germany and North France in the Middle Ages. As Fate willed, they became the subjects of the Russian Empire, but they weren’t given any rights even the right to freedom of movement. The region of their traditional habitation that used to play an important economic role in the days of the Poland’s independence, became a distant province of Russia – the Pale of Settlement .

The Museum of the Jews' History

Today the exposition of the Museum may be conditionally divided on two parts: – traditional culture – prevalent forms of community existence, education, charity, particular features of everyday life, observance of religious directions, “sacred service” (decorating synagogues and religious items); to this part it should be needed to ascribe the collection representing traditions and culture of non Ashkenasi Jewish Communities to this part of the exposition; – historical processes – mutual relations between the Jews and the society and authorities, the Jewish contribution into economy, culture and science development, a Jewish experience of land utilization and an attempt of creation of Jewish Autonomy in the USSR.

The Holocaust Memorial Synagogue   is a synagogue located on Poklonnaya Hill in Moscow. It was built in 1998 to complement an Orthodox church and a mosque that are also part of the outdoor museum dedicated to Russia’s victory in World War II .

The building of the Temple of the Memory on Poklonnaya Gora, a flat hill in the West of Moscow, between the Setun River and another hill, was constructed and opened on September 1998 in Boris Yeltsin ‘s presence. The construction of the Temple of Memory was financed by the Russian Jewish Congress – a non-profit charitable fund and the largest secular organisation of Russian Jews. The Temple of memory architect was Moshe Zarhy (Zarhy Architects) from Israel. In the Holocaust Memorial Synagogue there is a hall with a balcony, the offices for the rabbi and a library. An exhibition about history of the Jewish people and the Holocaust was located in the building. The building is also used as a museum. The interior of the building was designed by Frank Meisler , too. Meisler created wall sculptures showing Jerusalem, the Twelve Tribes of Israel and the Five Books of Moses.
